Pasta with Feta cheese, Basil and Lemon


Pastaaaa! If pasta didn't exist, this last month I'd probably have died from starvation! Two reasons. First, food in the finnish student restaurants is FLAVOURLESS and second I barely had time to even sleep not mention cook! This recipe I actually tried for the first time in Finland. I think it's very suitable for a hot summer day since the lemon adds a very fresh note to the dish. Basically the recipe contains pine seeds but since the supermarket that I visited wasn't selling them, let's pretend that they're there!


Ingredients (serves 2)

200 g dried spaghetti
100 g feta cheese
juice of half a lemon
lemon zest of half a lemon
4 tbs extra virgin olive oil
1 tbs toasted pine seeds
half a cup of basil leaves
salt & pepper

Prepare spaghetti: Follow the instructions stated on the packet. Once ready, drain the pasta and rinse with cold water. Return the spaghetti to the pot and add the olive oil, lemon juice and zest, half of the crumbled feta cheese, basil leaves and roasted pine seeds. I personally prefer to roughly chop the basil leaves. It makes the smell more intense. Mix everything well, check the seasoning and serve. Sprinkle the remaining feta on top of the pasta. Enjoy! :D

Tip: Toast the pine seeds in a non-stick pan. Just add them and turn heat to medium without adding any oil. Cook for about 3 minutes, shaking the pan every 30 seconds until the seeds turn golden.
