Peas with Potatoes and Carrots


Ok. Peas. Not everyone's favourite, I know, but I really can't find a reason why not to adore this dish! It's super easy, super fast and above all, super tasty. And it's done in 30 minutes! Meat lovers can always add some beef in there, but I think it's not needed. 



Ingredients (serves 4)

500 g  peas 
2 carrots, sliced
2 potatoes, cut in cubes
2 medium sized onions, finely chopped
1 tbsp tomato paste 
1 cup of tea olive oil
1 tsp sugar
1 chicken stock cube (optional)
salt & pepper

Prepare: In a pot, add half a cup of olive oil and sauté the onions for 4 minutes. Try to cut the potatoes and carrots in similar sizes, so that everything cooks evenly. Add all the ingredients, except for the olive oil. Add water in order for all the ingredients to be covered. 
Put the lid on and cook for 20 minutes. Add the remaining olive oil and boil for 10 more minutes.

Serve with greek yoghurt and fresh bread. Enjoy!
