Spinach pie (Spanakopita)


The first thing I literally learnt to cook. I remember spending hours of my childhood's summer vacations next to my granny on the floor, having this huge wooden round surface on my legs, trying to roll out the filo. Man that was difficult..My granny on the other hand, made it look like a piece of cake, always making a really crispy and thin dough, while I always ended up covered in flour. Here's a picture of her preparing her signature dish - a spinach pie, for more than 10 people.


Ingredients for the filo (2 baking pans 35x25)
750 g all purpose flour
2 ts salt
2 tbs vinegar
1 glass of wine olive oil
1 1/2 cups of warm water

Ingredients for the filling

1 kilo spinach
500 g feta
salt & pepper
3 big onions
2 eggs
some dill (optional)
2 tbs olive oil



Prepare dough: In a large bowl mix the flour (sifted first), vinegar, salt, olive oil and add the water while kneading until you have a dough that doesn't stick to your hands. Cover and leave it be for 1 hour. Divide in four and roll out on a floured even surface.

Prepare filling: In a large frying pan, add the onions (grated), olive oil, spinach, salt & pepper and cook till all of the water evaporates. Add the feta and set aside. Whisk 2 eggs and pour them over the spinach-feta mixture. Mix well. 


Sprinkle some olive oil on each of the baking pans just so the dough won't stick while baking. Take the first of the 4 rolled out filo and place it in the baking pan. Make sure that the filo is somewhat bigger than your baking pan in order for the edges to stay out of it. Spread half of the feta-spinach mixture evenly, on top of the first filo. Place the second filo on top of the filling covering it completely. Grab the edges of the bottom and upper filo of each side and roll them towards the center of the baking pan. Sprinkle some olive oil in order for your filo to be crispy. Repeat procedure for the second baking pan. Cook in a preheated oven at 180°C for 1 hour. Take out of the oven and let the pie cool for 30 minutes. Cut in pieces of desired size and serve with greek yoghurt. Enjoy!
